So da boys are out tonight at my stepdaughter’s Christmas concert, and I am attempting to catch up on work. Somewhere, buried in one of my I-need-to-make-this-soon piles, is a recipe for eggplant. Can’t remember what magazine I tore the page from, nor the method, but it was recent enough that I bought the eggplant over the weekend. Knowing The Husband and Nicholas are going to protest eggplant at the dinner table, I figured it would be a perfect, healthy little bite for me to nibble on tonight whilst catching up on a few things in their absence. But if only I could find where I put the darn clipping … sigh. So barring sharing a new and fabulous (I’m sure it would be!) eggplant recipe, I rummaged around in the fridge and made a Grilled Havarti, Ham and Tomato sandwich, thus fulfilling my ARF/5-A-Day requirement, although not nearly as exciting as the eggplant could have been.
