Something happened when I went to the hospital. Besides the obvious. The Neighbor Wife started cooking. And not just cooking … cooking three to four dinners at a time to get them through the week. Tonight we were the lucky recipients of one of the dinners. She made Lasagna Rolls, using a Cooking Light recipe. Tasty, healthy and an ARF/5-A-Day contribution that didn’t fill my sink with dirty dishes – what more could I want? Now on with what everyone else cooked up this week… a short round-up this week, which works out well since it’s nearly midnight and my eyelids are getting heavier by the second.
Cooking Is Medicine is up first this week with some inspiration from Mary Lou Retton by way of her Perfect 10 Southwest Chicken recipe. Given the ease of preparation, this one is definitely going in my “to-try” pile:

A wonderful collection of dishes–basically, they all sound fabulous but I can’t wait to try those roasted veggies and brussels sprouts in particular! Sorry I didn’t make the roundup this week. . . hope to play along next time.
I’m glad you liked it. I’m starting to get the hang of this cooking thing. But, I have to say it’s very hard work. But, very rewarding.
