Tuesday already coming to a swift close and the ARF/5-A-Day roundup is upon us. My mom and I escaped for a quick dinner out, and I got the opportunity to introduce her to The Melting Pot, a fondue restaurant. I haven’t been there in awhile and it made for a perfect dinner on a wet and windy evening. I cannot wait until warm weather is upon us full-time, making way for spring and summer fruits and vegetables, and weekly trips to the farmer’s market. Until then, we have our ARF/5-A-Day roundup. More Bread and Cheese, Please tackles one of my favorite vegetables tonight with her Artichoke-Prosciutto Risotto. Risotto is one of those things I have yet to try and make at home, but her version sounds like a perfect place to start!
