I remarked how pretty that tiny sliver of the moon I remarked how pretty that tiny sliver of the moon was on the way home tonight, and my friend pulled over right away so I could grab a photo. That’s when someone really knows you! It was just too beautiful to resist. 🌙

Context: 1/ picture perfect weekend, 2/ threw together a quick meal w udon noodles, steak and broccoli, so good, 3/ the sun reflections on this painting struck me today, looked like a cross 4/ it takes all afternoon but nothing like Sunday Gravy, 5/ six months old, 6/ when he wants some serious zzzz’s, he covers his eye with his ears, the cutest, 7/ breakfast pastries at @coniglios
I have plenty of reusable shopping bags since New I have plenty of reusable shopping bags since New Jersey banned the plastic ones last year. But when I spied this beauty for a buck, how could I resist? It just is so darn happy, which makes me happy. The little things aren’t so little. 💛

I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

Cheese Delights

If you’re a long-time reader of Sweetnicks, you’ve no doubt heard me prattle on about the story behind Cheese Delights. Growing up, my parents used to entertain a lot, and this was one of my mom’s go-to appetizers. They would start in the living room with their guests and plates of finger food. When it was time for the main course, everyone would move into the dining room, and my mom would call me and my sister down to the kitchen, and we got to feast on the appetizers, Cheese Delights being a frequent and favorite one. Good times. Good times.

Surprisingly enough, as much as we love Cheese Delights, I’ve yet to post the recipe! Time to rectify that. A snap to whip up, it’s a great go-to quick appetizer when guests come over. I mean, really, a crispy English muffin topped with melty, gooey, cheesy goodness … how could you go wrong? They also freeze beautifully, so are perfect to have on hand when last minute company comes a’callin’. Enjoy!

Cheese Delights
6 English muffins, split in half
4 oz. shredded sharp Cheddar cheese
4 oz. shredded Mozzarella cheese
3/4 cup mayo (light works fine)
1 cup black olives, chopped fine

Lightly butter muffin halves. Mix remaining ingredients together to form a paste and spread on muffins. Broil until bubbly (watch, it goes quickly). Once cooled enough, cut into quarters. (Original directions has the cutting before the broiling, by the way, but I think it’s easier to cut afterwards).

    You’re inspiring me to have a retro dinner party. What decade did your parents serve this? Love it. You know how you go to all that trouble to make a fabulous appetizer, and everyone goes for the simple one? I have that situation with Lil Smokies which I will blog about soon. Funny.

    Oh, I like these. They are very similar to Ree’s Olive Cheese Bread but so much easier! My olive-loving daughter will be thrilled.

    I love these. Have you tried Paula Dean’s Crabbies they are also very good. I toast my muffins first for extra crunch.

    I’m not a huge olive fan, but I think these would be delicious with some mushrooms. I’m getting hungry just thinking about it!

    Isn’t it funny how the simplest recipes are the tastiest? I make something similar using Pillusbury pizza dough/crescents, 2-3 different cheeses, parsley, and minced garlic. To give it a little kick, I sometimes add chopped pepperoni.

    I like olives but I would not put them in the love group. I will tell you that I LOVED them the other night and could not stop eating them. They were YUMMY.

    Lori Lynn – when I think of “retro,” I think of the 1950s. ;) If I had to put a date on these, I’d have to say mid-80s. Hard to believe we’ve been making them that long!

    Sharon – ooh mushrooms sound like another good alternative.

    Mellisa – Haven’t tried PD’s Crabbies, but imagine they’re similar to another Crabbies recipe I have. Delicious stuff, and another good freezable one.

    Foodmomiac – will check out Ree’s recipes. She sure has gorgeous pictures, doesn’t she?

    Maria – your version sounds like another great option. :)

    i have tried ree,s olive cheese bread but will try these soon.the olive cheese bread was very good and froze well too.
