Now although I, of course, played along this week, I don’t have a picture worthy of viewing … While we were down the shore this weekend, I made a favorite salad in our house, Chopped BLT Salad. A ridiculously simple salad to make, I cut down on the fat by using reduced-fat mayo (always) and baking the bacon in the oven on a wire rack, set on top of a cookie sheet, letting the grease drip down. Unfortunately, I always struggle with taking pictures of white food, so you’re just going to have to close your eyes and imagine … crisp iceberg lettuce, red plump juicy tomatoes and ultra-crispy bacon. Pure yum.
And last, but certainly not least, the woman behind the whole Weekend Herb Blogging extravaganza, Kalyn from Kalyn’s Kitchen dishes up Sauteed Chicken Breasts with Tarragon Mustard Pan Sauce … mmm!
OK folks, I’m done for tonight. Tomorrow? It’s our weekly ARF/5-A-Day roundup … ’till then!
