With the warm weather finally here, there is no shortage of colorful fruits and vegetables just begging to be eaten. One of our local farmer’s markets finally starts this Sunday and I honestly cannot wait to go. What can I say? It’s the food nerd in me I guess. With new crop comes new inspiration for our ARF/5-A-Day weekly roundup. Let’s get started.
Isha’s Kitchen is up first tonight with not one, but TWO, entries this week. Her Garlic Snap Peas sound like a great way to make use of fresh produce, and if that doesn’t grab you, her guacamole will:
Snarkmeister from Table for Two has the perfect dish to combat soaring temperatures, Asian Chicken Salad:
Claire from Cooking is Medicine celebrates a mini-milestone with a Cooking Light recipe for Banana Bran Scones:
More Bread and Cheese, Please satisfies a craving for Indian food with her gorgeous Saag Paneer:
Mmmm, I love me some avocados, and so does Renae du Jour, back this week with her Bean Tostado with Avocado Ginger Salsa:
Scribbles and Bites joins us for the first time this week, and was thinking avocado too … and bugs. Check out the gorgeous Avocado Mango Salad and then visit her site to see what the bugs are all about.
The Spiced Life gets a little bit ‘o inspiration from Jack Bishop with her Spiced Chickpeas and Roasted Onions on Local Greens. If you have Jack’s cookbook, A Year in a Vegetarian Kitchen, give the Garlicky Mushroom Quesadillas a try – so, so good.
One Kitchen, Two Dogs and a Girl avoids the grocery store, but still manages to serve up a winner with her Quick Miso Tofu Scramble:
Family, Friends and Food keeps it simple at a last minute get-together with her Red Pepper Hummus:
Sarah from What Smells So Good takes her biscotti for a ride on the healthy train:
And Sarah from Sarah’s Cucina Bella finishes us off this week with the very antioxidant-friendly Coconut Crusted Mahi Mahi:
And that leaves just me. I desperately need to make a good trip to the grocery store, instead of these mad dashes for “just a few things,” but I luckily I happened to have the ingredients for a tried-and-true on hand, one of Nicholas‘ favorites … Baked Caprese Salad. You’ll have to forgive the lack of a picture … that’s a whole ‘nother story.
Want to join in our ARF/5-A-Day roundup next Tuesday? Complete details are right here. We’d love to have you.
Tomorrow? Creme Brulee French Toast. ‘Nuff said.
Great round-up! I can’t wait for our Farmers Marker to “officially” open. I may still go this week and see what’s available.
Thats a wonderful round up…..and thanx for putting me up first on the list…thats very nice of you..
