When I was in middle school, I had literally THE WORST chapped lips ever. Like a complete red ring around my top and bottom lips. I don’t think that’s where my lip balm obsession started, but it certainly didn’t help. Jersey winters are no joke (or our hot summers), so don’t mind me while I just add to my collection. Weekly Menu Plan: October 5-11

October 5, 2008 · Narrative

bones.jpgAfter an insanely busy weekend, I’m almost glad tomorrow is Monday.  You  know how that goes … Monday is the chance to slip back  into a routine again, thank goodness!  Nicholas and I had planned a Mexican dinner for tonight, but The Husband was busy doing some work in the kitchen and that kind of punted that, so hopefully we’ll be Ole-ing tomorrow instead.  Here’s what’s on tap for our kitchen this week …

Monday: Tacos, Bean and Cheese Enchiladas and Nachos – tons of melted cheese.  ‘Nuff said.  Baking with Nicholas: 18 Carrot Cupcakes from Rachael Ray’s magazine.  One of our carpooling friends had a birthday last week and hit “the double digits,” so a belated celebration for her.

Tuesday: The Ditch Dog.  Martha Stewart dedicated a recent episode of her talk show entirely to hot dogs.  The whole 60 minutes.  Turns out she loves them.  And, of course, ever since I saw that, I’ve been craving them too (and had them twice since).  The Ditch Dog is a hot dog covered with macaroni and cheese, a recipe made popular from the Ditch Plains restaurant in NYC, and a hot dog that Martha deemed one of her favorites out of the 50 (!!) she sampled.  (You can read more about the episode in an article I wrote for Delish.com right here).  Also making Mararoni Salad, using a recipe I found on retro-food.com.  The Husband won’t eat it, but figured I could use it for lunch.

Wednesday: Onion Chowder with Cheesy Onion Popovers from Rachael Ray’s magazine.  Nicholas probably won’t eat the chowder and The Husband won’t think it’s enough for dinner, so will be adding some sort of salad to appease them both.  It’s been awhile since we had the Latin Caprese Salad, which I know Nicholas loves, so leaning that way.

Thursday: Open, and after three nights of cooking, most likely leftovers.  Baking with Nicholas: Pumpkin and Cream Cheese Muffins from Country Living magazine.

Friday: Kitchen closed.  Craft project with Nicholas: Glittered Bones and Bugs.  Martha Stewart’s favorite holiday is Halloween, and she has a free daily newsletter with Halloween ideas that I love.  This was one of them, and something she made on her show last year as well.  A good way to end the week, and I know Nicholas will get a kick out of it.

Saturday: I heard a rumor that The Sister-In-Law is making dinner – whoo hoo!  Planning on going apple picking again, and will be making Baked Apples with Creamy Caramel Sauce.  Love Fall dessert recipes.

That takes care of my week – what about yours?

Here’s the list of her favorites > Martha Stewart’s favorite hot dogs. I loved seeing how excited she got over the hot dogs. :)

The Onion Chowder with Cheesy Onion Popovers sounds like something we’d really like. Is that from a recent issue of Rachael Ray’s magazine?

I don’t plan menus (since I live alone) but for organization I do try to shop for the week every weekend with some meals in mind. Last night I made a spinach and proscuitto lasagna that I’ll probably dig into tonight and freeze the rest for later in the week/beyond. I also have some italian chicken sausage in the freezer and made garden vegetable soup on Sunday afternoon so I’m pretty much set!

Fall Desserts, however, I need to get on that…:o)

Teresa – yes, it’s either September or October. Month isn’t written on the page. Just looked on her site and it’s not there. If you need it before I post it, let me know. :)

Darius – cheese and I are good friends. Large, copious amounts of it, please.

Maris – I’ve had a hankering for lasagna lately – your prosciutto one sounds delish!
