I don’t eat French fries often, but when I do, I I don’t eat French fries often, but when I do, I’m going to make it count. Doo Wop Eats opened a few months ago in downtown Denville and their fries are LEGIT. They are hand cut and taste the way fries should … like potatoes! I add a sprinkle of salt and dunk them in a side of their special sauce and they are pure perfection. You can order a small bucket or a large one (better for sharing!), or as a side item with one of their other delicious menu items like their cheeseburgers, fried chicken sandwiches or cheesesteak. I do believe they’re the best fries in town. I said what I said. Doo Wop’s menu celebrates all your favorite Jersey shore boardwalk treats, including Fried Oreos, clam strips and milk shakes and has a fun vibe for kids and families. 😍
The Grinder Salad, a recipe I found on tiktok that The Grinder Salad, a recipe I found on tiktok that takes all of your favorite ingredients from a grinder (or sub) sandwich and makes it into a delicious chopped salad. It’s as easy as putting everything in a bowl and chopping it up. Perfect for busy days and lazy nights, light meals and warm weather choices. Ingredient list below. Enjoy!

One bag or arugula
One container of cherry tomatoes 
Quarter pound of hard salami
8 Oz of fresh mozzarella
One small red onion
1/3 cup banana peppers 
Handful of fresh basil
Half cup Italian salad dressing
3 T Kewpie mayo
2 T red wine vinegar 
Sea salt and black pepper

Chop it all up, add a half box of ditalini pasta, cooked. Mix to combine.

We had a fun little board party this week and the We had a fun little board party this week and the delicious whipped Brie I shared earlier was front and center. If you haven’t heard of board parties, it’s when every guest makes a different type of food board and brings it - so much fun noshing ensues! With toasted baguette slices, cornichons and local honey, this was mostly a French-inspired board. So simple to pull together and totally my kind of meal.

It was thick and juicy and cooked to perfection. Love that the lettuce was shredded, and that the bun was toasted and slightly crispy. If you’re local, pop in and give them a try - don’t miss the fries!
I haven’t had a snow pic on my feed all winter b I haven’t had a snow pic on my feed all winter because, well, it’s been a weird one. Despite living in the Northeast, our Winter has had hardly any snow. Not to worry though, we’re going to be having snow in the Spring at this point. 😂 End of the week has a high of 50 degrees, today we lived in a snow globe with awful wind. I don’t even care what freaking season it is, just PICK ONE. And for the love of all things holy, I desperately need sunshine.

Super Wedge Salad

I’ve been going to the gym 4-6 days a week regularly for the past 2+ months. The kids come with me a couple of the days that I go, and on those nights, dinner is either leftovers or something simple. We just walk in the door too late to be playing too much in the kitchen. Between homework, bath, storytime and bedtime, it’s a race to the finish line.

When I spied this recipe for a Super Wedge Salad in a recent issue of Rachael Ray magazine, it seemed perfect for one of our all-together-at-the-gym nights. What I love most about this salad? That I can mix and match the toppings based on whose plate it is. More hard-boiled egg? Less crispy bacon (as if!)? Extra tomatoes? It’s perfect to fix on the fly and cater to everyone’s tastebuds or cravings, without feeling like you’re becoming a short-order cook in your own kitchen. I ended up using bagged romaine because I had it on hand, and added a few slices of ham for extra protein. Oh yes, and I used the low-fat mayonnaise, instead of full-fat. We switched to that years ago, and you can’t even tell. Other than that, I made the recipe as is. Even with having to hard-boil eggs and cook up some bacon, dinner was done in 20 minutes. Crazy delicious, and the perfect thing to eat after an hour-long Power Dance class.

Oh and the best part? In seven-and-a-half years, Nick has wanted no part of hard-boiled eggs. Truth be told, he doesn’t like any eggs, though will occasionally eat a deviled egg. Last week when I made this salad? He ate three of them. Go figure.  Maybe this year at Easter, the beautifully colored hard-boiled eggs will get eaten by someone besides me!

Laundry Day

Don’t you wish life was as easy to sort as laundry?

Super Wedge Salad

4 ounces sliced bacon coarsely chopped
1/3 cup mayonnaise (I used light mayo)
Salt and pepper
1 head romaine lettuce, quartered lengthwise
4 eggs, hard-boiled and peeled
1 carrot, shredded
2 small tomatoes, finely chopped
1 Haas avocado

  1. In a medium skillet, cook the bacon over medium heat, stirring often, until crisp, 4 to 5 minutes. Transfer to paper towels to drain.
  2. In a small bowl, whisk 2-1/2 tablespoons water into the mayonnaise; season with salt and pepper. Divide the romaine wedges among 4 plates and drizzle with half of the mayo dressing.
  3. Using an egg slicer, slice each egg lengthwise, then crosswise. Sprinkle 1 egg on top of each wedge; top with the cooked bacon, the carrot, tomatoes and avocado. Season with salt and pepper, then drizzle with the remaining dressing.

    Hard boiled eggs speak to my heart. I love them. I usually boil them in advance, aka all the time!

    Yay for you going to the gym! That’s awesome. You deserve to do something for YOU.

    Salads are perfect on-the-go dinners. You can mix and match so many different ingredients…they can basically be clean out the fridge meals.

    Love this. A lot of evenings now that the sun is staying out longer I’ll go home, grab the dog for a long walk, and by the time I am get home am famished and have no desire to full around in the kitchen. Salads are my to go. I always have the makings of one in the fridge — lettuce, cucumbers, tomoatos, carrots, some nights I add a slice or two of ham, some nights I throw a chicke breast on the foreman to slice up and add. The possibilities are endless and the result is always so delicious.

    I love hard boiled eggs… and at least one of my boys does, too. We have a busy schedule several nights a week, and dinner ends up being something quick and easy on those nights… this salad idea looks perfect as we head into the warmer months.

    That salad has definitely set my stomach grumbling! I love salads, too, and this sounds like something I could convince others to partake in. Or maybe whip up on the weekends and bring to work for lunch? Yum!

    Great looking salad. LOL… you should see how much laundry the 2 of us have in one week. It’s a lot for 2 people.
