I have plenty of reusable shopping bags since New I have plenty of reusable shopping bags since New Jersey banned the plastic ones last year. But when I spied this beauty for a buck, how could I resist? It just is so darn happy, which makes me happy. The little things aren’t so little. 💛

I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

My Big Fat Greek Breakfast

When it comes to breakfast, time is usually short and the most important meal of the day quickly becomes an afterthought.  For the past few months, I’ve been vacillating between fresh fruit, a variety of veggie-packed egg white omelets, or oatmeal mixed up with a chopped up banana.  A Greek egg white omelet has been an often go-to choice.  Quick to make and packed with spinach and a bit of feta, it’s a good healthy way to start the day.  For the time being, I’ve sworn off all cheese except feta.  As a self-confessed cheese-aholic, this pains me in ways I can’t even describe, so feta makes many appearances during the week.  Not quite the same as a nice Stilton or Cheddar, but it will have to do.

Over the weekend, my friend Beth and I were talking about clean eating, and she shared this breakfast that she recently made.  With just a few minutes to saute some mushrooms and onions, and a half-hour in the oven, you can have your breakfast made for the whole week.  Now that’s time well spent.  If the Greek flavors aren’t your thing, you can totally change this up … add zucchini or bell peppers, or if you’re really lucky, swap out the feta for cheddar.  The options are only limited to your imagination, and this dish is a great way to use your fresh farmer’s market finds or clean out your refrigerator from leftover bits and pieces.

Quick and easy to make, inexpensive, healthy and delicious to boot.  My Big Fat Greek Breakfast indeed.

Trying to Keep Superstitions at Bay

In our family, we are more than a tad superstitious. Madeline, unfortunately, doesn’t really care. I usually try to hide the umbrellas from her, because otherwise this is what happens.  When I’m trying to make dinner.  You try explaining to a two-year-old that open umbrellas inside the house are a big no-no.

1 carton of egg whites
1 box frozen spinach, thawed out (I used half of a 9 oz bag of fresh spinach)
1/2 an onion, finely chopped (I used a whole onion)
mushrooms, chopped (I used four small mushrooms and four crazy big ones, using up what I had on hand)
Feta (I used about three quarters of a 5 oz container)

Spraay a 9×13 baking dish with Pam.  Preheat oven to 375.  Saute onion and mushrooms until soft.  Add spinach and cook to get out most of the moisture.  Season with salt and pepper, but not to much salt because of the feta.  Put the mushrooms and onions in the bottom of the prepared baking dish.  Pour the egg whites over the top and add the feta.  Stir to make sure it’s all combined (whoops!  missed that step!).  Bake for 25-35 minutes until entirely set (it will puff up and deflate after you take it out of the oven).

    Breakfast is my favorite meal of the day and I like to have a very leisurely one…but then again I don’t have two small children or a real job! The omelet/casserole looks delicious. Kalyn of Kalyn’s Kitchen has a lot of breakfasts like these that you might enjoy!

    I make a spinach and egg skillet as a side dish sometimes for supper.

    But, usually just use whole eggs and spinach. Adding the mushrooms, onions and feta (or cheddar) sounds like a good variation.

    What a great way to start the day! I love that this can be made ahead and the flavors changed according to what you have on hand or are in the mood for that week. Yum!
