I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

How to Make S'Mores
When Nick woke up this morning, on his last day of summer camp, he came into my bedroom and asked if his outfit was ok.

He was wearing his s’more shirt (courtesy of Grandma and J. Crew’s Crew Cuts, btw).

To say this kid is in tune with what is going on would be an understatement.  I have long since believed he has had a sixth sense, but that’s a story for another time.

Today was my deadline for posting about s’mores for the gang at Hershey.

And Nick started his day with his s’mores shirt.

I hadn’t said a word previously.

Totally ‘n sync.

And not referring to the hotness that is Justin Timberlake and his old boy band.

My “surprise” topic from Hershey was to show you my “favorite s’mores face.”

I’m sure they expected pictures replete with melted chocolatey goodness.

Sticky marshmallow lips.

Graham crumbs on a cheek.

And believe me when I tell you, my kids totally have the messy eater thing covered.

As if you had any doubt.

But I decided to take it a different direction.

THIS is one of my favorite s’mores faces:

I am forever grateful that my sister is my partner in crime when it comes to teeny bopper events. You know, places where we have no likely business attending being we are twice the average age of the rest of the audience. Oh wait, that’s just me ’cause she’s younger. When I told her I wanted to see Britney Spears, she didn’t hesitate. The last time we saw Britney together was the day I found out I was pregnant with Nick. December 2, 2001. I am horrible about dates, but that’s a random one that stuck. I had a sleeve of saltines with me that night. And no, I have no baby announcement today for you. Joe Jonas was a surprise special opener. But my sister took several modes of transportation to get to the arena so we missed him. Which was a-ok. Because we didn’t even know he was going to be there. Nicki Minaj was the formal opener. Love her. Awesome in concert. I wholeheartedly believe her current smash hit Super Bass is the perfect Summer Anthem 2011. It’s my ringtone. We sing it at full volume when we hear it. The kids’ babysitter last night knows all the words to the song.  It’s goal to get them down, but man, it ain’t easy.  As far as Brit Brit, she was fine in concert, but I feel like we don’t need to see her again. It was basically the same show it was ten years ago, with her new songs thrown in for good measure. And those were the best parts. Given she’s such a performer, we were a little surprised. But it still made for an awesome summer night nonetheless. Even if most of the audience were still losing their baby teeth with Britney’s first single came out.

    Hmmm, for me right now, it’s a bunch of tired pediatric residents, forgetting work for a couple of days, remembering how fun it is to roast the marshmallow until it’s almost (or fully) burnt and then trying to figure out how to get it onto the graham cracker without letting it fall on the ground! We make s’mores at our peds retreat every year and it’s one of my favorite parts…the only time I have s’mores…at least right now!

    I love Nick’s shirt, that is cool. As for N’sync…Lance is from my hometown and went to my high school. He even came back one day and taught us (8th grade girls at the time!) one of the dances to a music video. Oh, we thought we were SOOOO cool. Ha!

    When I was little we lived in PA and I got to go to Hershey Park for my 1st roller coaster! It was WONDERFUL!! And we went thru the chocolate factory too. It is a great summer memory! I also went to Dorney park a lot. I’d love to see it again as a grown up!

    On a camping trip with my (now) husband, I remember him kissing the graham cracker crumbs off my cheek when we were making S’mores. They are still one of my favorite desserts :)

    Best Smore’s memory…… camping with the Girl Scouts at Jockey Hollow. We also love making them over the fire pit at my moms house.

    My favorite s’mores memory is when, as one of our senior week trips in college, our class went to a beach outside of Boston, started campfires and roasted smores. It was a pretty fantastic nights and one of the last where my friends were all together in one place.

    i’m super kinda jealous that you saw britney in concert.

    I love the s’mores tee! One of my favorite memories from this summer has been building a fire when we were on vacation and roasting marshmallows. My son was so excited to get to stay up late (and eat lots of sugar.) The whole trip was so much fun and I loved seeing the excitement on my son’s face!

    I’ve never actually eaten a s’more. I was never a Girl Scout – what can I say? If I win this kit I can make my first s’more. I did love the S’more candybar that Hershey sold briefly. I’m a little PO’d at Hershey about that and some other things. Moving to Mexico, changing the formula to cheaper ingredients and the worst – they stopped making Kissables which were peanut-free and not cross-contaminated with peanut and the closest thing to an M&M that Nick could eat. They replaced them with the Drops that Nick can’t have. But Nick loves their plain chocolate bars and their new aerated bars are safe for him too.

    My husband and I made smores inside in our new home after we moved in, and we got sticky roasted marshmallow all over the fireplace!!! We stick to making smores outside now!

    My husband built us a fire pit this summer when we took down our girls swing set and fort because, sniff, sniff, they have officially outgrown it! The fire pit has brought us many hours of pleasure and memory making this summer. The girls roast marshmallows for s’mores and we get to sit and relax with a glass of wine and a beer and watch our lovelies make memories.
