Did you know that International Delight has a line of gourmet flavored coffee creamers? Like a Caramel Macchiato one? And an Almond Joy one, for example? Yep, news to me too. Mostly because I don’t experiment too much with my iced coffee. Extra light, no sugar. Clearly I’ve been missing out.
But how about a little out of the box thinking when it comes to the creamers?
Like baking with them?
Which is exactly what I did when the folks at International Delight asked me to come up with a recipe using their fancy creamers. How about some Almond Joy Cake Bites for something completely unexpected?
And the best part? No sifting or dirtying tons of bowls. One saucepan. One baking dish. One small bowl to mix the frosting. That’s it.
And, including baking and cooling time, you can be eating these babies in under an hour … and using ingredients (aside from the creamer) that you likely have in your pantry already.
Let’s get started.
Almond Joy Cake Bites

- 1/3 cup butter
- 1/2 cup sugar
- 2 tablespoons water
- 1 cup milk chocolate chips
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 to 4 tablespoons International Delight Almond Joy coffee creamer
Icing:
- 3 tablespoons butter, softened
- 1-1/2 cups sifted powdered sugar
- 1 to 3 teaspoons milk (more if needed)
- 1/4 teaspoon vanilla
Preheat oven to 350. Grease 8×8×2 pan; set aside. In medium saucepan, combine 1/3 cup butter, granulated sugar and water. Cook and stir over med heat just until mixture boils. Remove from heat and add 1 cup chocolate chips, stirring until melted. Stir in eggs and vanilla, beating lightly until combined. Stir in flour, baking soda, and salt. Spread batter in prepared pan. Bake about 20-25 minutes or until edges are set and begin to pull away from sides of pan. Using fork, prick warm brownies several times. Drizzle creamer evenly over brownies; let pan cool.
For frosting:
in small bowl, beat 3 tablespoons butter with electric mixer on medium to high speed for 30 seconds. Gradually add powdered sugar, beating well. Slowly beat in 2 teaspoons milk and vanilla. If necessary, beat in more milk to reach spreading consistency. Spread over brownies. Cut into bars.
