Recipe: Rum Spiked Chocolate Milkshake with Crispy Bacon Swizzle Stick

August 14, 2014 · Narrative

An unusual mix of ingredients comes together for an adult twist on a childhood favorite … just in time to celebrate #CaptainRumDay.

Rum Spiked Chocolate Milkshake with Crispy Bacon Swizzle Stick

Are you familiar with the Food Network show Chopped? Chefs are given a mystery box of random (and I do mean random) ingredients and they are challenged to pull together an amazing dish.

Welcome to the Captain Morgan version of Chopped.

In a unique way to celebrate this Saturday’s #NationalRumDay, I was sent a box of, um, interesting ingredients. Ingredients that included bacon, pistachio nuts, sriracha, salsa, chocolate, Twizzlers, barbecue sauce, Pringles, and rum (natch). And the challenge? Create a new cocktail using Captain Morgan White Rum, and at least two of the other ingredients in the box. Someone has a good sense of humor.

No small feat, but when it comes to rum cocktails, I’m always up for the challenge.

I went through a long list of possibilities, eliminating them one by one along the way based on feasibility, the likelihood of execution, and the gross factor.

And I do believe I have a winner.

Because. Milkshakes.

Who doesn’t love a milkshake? Bringing you instantly back to childhood and thick straws and soda jerks, the old-fashioned sweet treat can’t help by conjure up happy memories (just ask Sarah, who is also thinking milkshakes this week).

And, well, adding white rum makes the childhood indulgence instantly adult-approved.

And, for a little something completely different, a salty bacon swizzle stick.

Because there’s nothing I love more than finding a way to add bacon to a recipe.

Even if it starts with chocolate and rum.

Because. Bacon.

Drink up (and responsibily!) and celebrate #CaptainRumDay this Saturday.

Caribbean Rum Baked Chicken Wings - Close-Up-001

My friend Joe came over for a quick bite to eat on Saturday night and I made wings. Wings are a perfect “guy food,” but, truth be told, I didn’t make them for him. I made them for me. I am, admittedly, a very late adopter to the world of wings, but I finally converted. The Ex always loved them, and I made them for him, and Nick does as well; somewhere along the way, over the last few years particularly, I finally saw the light. To the point that I actually have a Pinterest board dedicated to all things wings, and we’re slowly making our way through countless recipes.

Because. You know, finger food. Always a favorite. Late adopter or not.

This particular recipe was born out of an upcoming deadline for a client. The folks that I’ve been working with at Captain Morgan wanted a recipe that is perfect for upcoming Super Bowl parties. And, well, I’m not sure it gets more perfect than wings. Am I right, or am I right? But eschewing common cooking methods of frying the wings, I wanted to do something a little healthier. A quick blend of a few spices for an easy rub, these wings are broiled in the oven and then glazed. This way, you get the crispiness of something that is fried … without frying it.

Winner winner, chicken dinner.

Caribbean Rum Baked Chicken Wings-001

The slightly sweet glaze featuring Captain Morgan’s Original Spiced Rum gives it that messy wing vibe that we know and love, and a little dunk in bleu cheese dressing brings it all home.

Super simple to make, 25 minutes from start to finish, these Caribbean Rum Glazed Baked Chicken Wings are the perfect thing for Sunday’s kick-off … or any other day you need to satisfy your finger food craving or newest obsession with wings.

You know, like me.

Recipe: Banana Bread with Rum Infused Raisins {#CaptainsTable}

December 19, 2013 · Ad-Free, Narrative

A super simple and very moist banana bread with rum infused raisins. I can’t think of a better way to start your day.

Banana Bread with Rum Soaked Raisins - Black background-001

I swear I think the kids let our bananas get to the over ripe stage just so I’ll make banana bread, pancakes, or muffins. Because even though they ask me to buy bananas all the time, they rarely will eat them just as is. This time, I decided to go one better and while making today’s banana bread, I incorporated rum into it so I could kill birds with one recipe.

Namely the next recipe in my development for Captain Morgan rum and their #CaptainsTable challenge.

Because, really, why have just plain banana bread when you can have banana bread with rum soaked raisins? Which pretty much sounds like the perfect breakfast or snack during the holiday season, no?

The #CaptainsTable challenge is ongoing over the next few months, and I and a handful of other bloggers were tasked with creating recipes for Captain Morgan rum. Rum, which is, of course, the perfect thing to plump up some nice juicy raisins and make for a super moist banana bread. Aside from the “soak in rum” part, this recipe only takes a few minutes to pull together. An hour of baking later and you’ll be rewarded with a nice warm, soft, not overly sweet, just perfect slice of banana bread.

Bonus points for toasting a slice and smearing it with a swipe of warm butter.

Since I’m currently carb-free, I shall live vicariously through all of you, and my children, who have already eaten three slices.

‘Tis the season for giving, for sure, and Captain Morgan will donate $1 to WhyHunger every time the hash tag #CaptainsTable is used across social media this holiday season. So, please, if you tweet, pin, facebook, or Instagram this post, please add the #CaptainsTable hash tag so we can help raise as much money as possible for a great cause.

For all things Captain Morgan, and to see the recipes that the other bloggers are creating during the challenge, be sure to follow them on Facebook, Twitter, Pinterest, and Instagram.

Recipe: Caramel and Toasted Coconut Rum Cake with Candied Walnuts {#CaptainsTable}

November 26, 2013 · Narrative

A delicious rum-infused cake with caramel and coconut that is perfect for the upcoming holiday season.

Caramel cake - close up-001
The Captain Morgan brand, along with Chef Hugh Acheson, recently launched the Captain’s Table Challenge, and during this challenge, a handful of bloggers, including myself, will be sharing recipes that we have created using the Captain Morgan Original Spiced Rum and Black Spiced Rum. As a devotee of Bravo’s Top Chef, I am no stranger to Chef Acheson and his culinary accomplishments, and as I worked on tonight’s recipe, which happens to use a boxed cake mix and a box of pudding mix, I wondered if he would approve.

Since he is judging all our recipe submissions, I hope so, and I decided that Chef Acheson would appreciate a little efficiency in the kitchen from a working mom. After all, there are so many of us in that position, an accessible recipe is surely a good thing.

When the box of Captain Morgan arrived, I knew I wanted to work with the Original Spiced Rum first. This bundt cake was originally inspired by an old recipe from Jell-O, believe it or not, but I made some drastic changes along the way.

All in the name of lily-gilding deliciousness.

Because, after all, why just have rum when you can have rum with caramel, coconut, and candied walnuts?

The end result? A slightly sweet cake that is perfect for your upcoming Thanksgiving Day table. Because the glaze and caramel sauce are drizzled over the cake, as opposed to frosting, the sweetness is subtle, but not overbearing. A little soft, sweet bite from the toasted coconut, and a nice crunch from the candied walnuts … a simple but sophisticated cake with a hint of Original Spiced Rum, you’ll find yourself making this one again and again.

I am a big fan of social media, and even more so when we can use it for good. The generous folks at Captain Morgan will donate $1 to WhyHunger every time the hashtag #CaptainsTable is used across social media channels this holiday season. Which means if you tweet, pin, or facebook this post with the hashtag #CaptainsTable, a dollar is donated to fight hunger every time. If there ever was a time for sharing, this would be it.

Caramel Cake - top view-001

I will be working on developing more recipes for Captain Morgan throughout the holiday season, so if you like rum, there’s plenty more to come. In the meantime, if you are looking for a perfectly classic cocktail recipe to go along with your turkey, you can’t go wrong with a Rum & Coke, with Captain Morgan, natch.

For all things Captain Morgan, and to see the recipes that the other bloggers are creating during the challenge, be sure to follow them on Facebook, Twitter, Pinterest, and Instagram.

Tomorrow? We talk Thanksgiving, as I share a quick round-up of our holiday favorites.
