I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

Recipe: Protein Balls {No Bake}

Quick, easy, and healthy – what combination could be better for a grab-and-go snack? Let’s make Protein Balls!

A few weeks ago, we tailgated at a Jets practice and friends brought a batch of these Protein Balls. When we parted ways at the end of the evening, she divvied up the leftovers and I was hooked. I’ve made a few recipes for balls and bars (see Peanut Butter Quinoa Granola Bars, No Crap Peanut Butter, Honey and Oat Bars, Oats and Honey Bars with Cranberries, No Bake Vegan Granola Bars, Coconut Lime Energy Balls, Trail Mix Energy Balls, and Chocolate Peanut Butter Protein Balls to name a few) over the years and am always looking for a new way to make them. Bonus points if I can find a recipe that my kids actually like too.

Spoiler alert: this isn’t it.

No matter, more for me and for me to share with others.

Over the weekend, I’m trying to block out an afternoon to cook for the week and set us up for less chaotic weekdays, and this past Sunday’s cooking marathon included these Protein Balls. They are very simple to make, just mix everything in a bowl, and with these guidelines, you can certainly alter it a bit to suit your personal tastes, dietary guidelines, or allergies.

Almond butter would work fine instead of peanut butter. Golden raisins would be delish instead of the chocolate chips. Maybe a touch of cinnamon? Just concentrate on keeping the ratios of the binder ingredients the same (honey, peanut butter, oatmeal) and you can play a little beyond that.

I use a mini cookie scooper for shaping these – it makes quick work of it and then all the balls are all the same size and your hands aren’t gross. I let them hang for a bit in the fridge on a flat cookie sheet, and once they firmed up, I transferred them into a container for easier storage. It’s made a good grab-and-go breakfast as I take a few if I’m running late in the morning, or I’ll have one during an afternoon slump, or after dinner if I am craving something sweet.

Recipe: {Whole30} Coconut Lime Energy Balls

If you’re looking for a tasty sweet treat that you can pop into your mouth guilt-free, look no further. These Coconut Lime Energy Balls are just the ticket.

If you know about Whole30, you likely know that snacking is strongly discouraged. And, of course, the best way to guarantee your success whilst doing a round of Whole30 is to be an ardent rule follower.

That being said, there are times when you’re on the go and need to pack a few grab-and-go edible things to keep hunger at bay … or those times when you’re hungry, but just not hungry enough for a full meal.

That’s when these tasty little energy balls would come in handy.

With just a handful of easy-to-find ingredients, you can whip these up in nothing flat. A friend and I trade Whole30 food every Sunday night, so I split this batch with her, and I think it netted about 12 energy balls for each of us.

Somehow, despite the fact that there is zero sugar added, one bite and you’ll instantly taste something that is reminiscent of Key Lime Pie. If Key Lime flavors aren’t your thing (surprisingly, it’s not a usual go-to for me either!), a quick google search will present you with tons more flavor possibilities. I spied a Mocha one that is totally on my list for next time.

Recipe: Trail Mix Energy Balls

Healthy and delicious little energy balls are just the thing when that afternoon slump hits … or any other time of the day.

When it comes to making good food choices, I think no matter what plan, lifestyle, or diet anyone follows, I think we can all agree on one thing.

If you don’t have crap in your house, you won’t eat it.

It really is that simple.

Rarely do I have a craving so intense that I will actually LEAVE my house, GET in my car, and GO GET IT.

So that means that if you keep healthy (or relatively healthy) items in your house, chances are that’s what you’ll eat.

If you have Oreos in your cupboard, you’re more prone to eat them.

Which means I make a conscious effort, for the most part, to make sure I stock the healthy stuff.

That’s not to say that Oreos aren’t in our pantry.

They are.

But a) they don’t tempt me and b) it’s all about balance, baby.

So here we are … Trail Mix Energy Balls.

Takes less than 15 minutes to make them, and it will take the edge off when you’re a little bit hungry but don’t need a meal. Or to cover you during that afternoon slump when you’re CRAVING ALL THE THINGS. Or if you need a little sweet finish to end your evening. This is that. I’ve included the recipe below, but know this … it is forgiving. Swap out the agave and use honey. Use chia seeds instead of flax. Or go crazy and USE BOTH. Allergic to peanut butter? Almond butter or sunbutter is a-ok too. Carob chips would be a great substitute for the chocolate chips. Just understand the basics of the recipe and the measurements, and GO TO TOWN.
