I couldn’t find the expiration date on the burrata I bought from the farmer’s market goodness knows when. And I didn’t measure the heavy cream and added too much and had to scramble to find some mozzarella to fix that situation. Does it still count if I celebrate National Coquil Does it still count if I celebrate National Coquilles Saint Jacques the day AFTER? I say yes. What IS Coquilles Saint Jacques? It’s a scallop gratin. I love shellfish, however my children do not, so I don’t eat it as much as I would like. My plans to make this yesterday were thwarted by the seafood shop being closed, grocery store #1 having questionable scallops and grocery store #2 only having frozen. So here we are! I used an Ina Garten recipe (you can always trust her recipes!) and it was simple to make and so freaking good. Those little crispy bread crumb bits on the top were everything good in this world. Since I currently can’t be trusted to blog the recipe 😂, you can swipe left for the exact title to Google (which I found on Food Network) and swipe left one more time for my changes. Never underestimate the power of a simple change ( Never underestimate the power of a simple change (swipe left for a before). Twenty years of calling this home and I finally got to choose the house paint color, and I’m more obsessed with our house than ever. Bonus points for the magic of window boxes, styrofoam, wadded up newspaper and a hot glue gun. ✨

Recipe: Peanut Butter Quinoa Granola Bars

A tasty, crispy granola bar with bits of chocolate chips that will keep you coming back for more.

In all my years of clean eating, I will say that one of the biggest keys to success is 1) not bringing junk into your home, and 2) making sure your kitchen is stocked with healthy items.

Grab and go items? Even better.

If I don’t have Doritos in the house, I’m not going to eat them.

It really is that simple.

Because while I like Doritos, I’m not going to get in my car and go to the store to specifically buy them.

So if you and I make sure our cabinets, pantry, and refrigerator are consistently stocked with healthy items, it’s far easier to stay on track.

#goals

These Peanut Butter Quinoa Granola Bars are a good thing to add into your rotation.

All three of us like granola bars.

For a quick, we-have-negative-time breakfast.

For an after-school snack.

To combat that afternoon slump when you’re really not HUNGRY, but need something to take the edge off.

To stash in the car when you’re on the go.

So versatile.

And when you can make them yourself? So you know there’s no junk in it?

Even better.

This recipe is from Ambitious Kitchen, and makes a nice small batch. Eight bars to be exact, although I cut them a bit smaller.

The chocolate chips are optional, but I added them.

Because chocolate.

You can head over to Monique’s site to find the full (and easy) recipe. I only made two changes.

I used agave instead of honey. And flax seed instead of chia.

The bars stay nice and crispy forever, and the quinoa gives it a little nice unexpected bite.

Held together by peanut butter and agave.

And, well, the chocolate is a given.

It’s a winner.

    I’m on my surgery rotation right now, so I’ve been hoarding easy healthy snack ideas that I can carry around in my pockets for in-between surgery times in a serious way. I see these coming to snacktime around here in a very near future!
