My friend Joe came over for a quick bite to eat on Saturday night and I made wings. Wings are a perfect “guy food,” but, truth be told, I didn’t make them for him. I made them for me. I am, admittedly, a very late adopter to the world of wings, but I finally converted. The Ex always loved them, and I made them for him, and Nick does as well; somewhere along the way, over the last few years particularly, I finally saw the light. To the point that I actually have a Pinterest board dedicated to all things wings, and we’re slowly making our way through countless recipes.
Because. You know, finger food. Always a favorite. Late adopter or not.
This particular recipe was born out of an upcoming deadline for a client. The folks that I’ve been working with at Captain Morgan wanted a recipe that is perfect for upcoming Super Bowl parties. And, well, I’m not sure it gets more perfect than wings. Am I right, or am I right? But eschewing common cooking methods of frying the wings, I wanted to do something a little healthier. A quick blend of a few spices for an easy rub, these wings are broiled in the oven and then glazed. This way, you get the crispiness of something that is fried … without frying it.
Winner winner, chicken dinner.
The slightly sweet glaze featuring Captain Morgan’s Original Spiced Rum gives it that messy wing vibe that we know and love, and a little dunk in bleu cheese dressing brings it all home.
Super simple to make, 25 minutes from start to finish, these Caribbean Rum Glazed Baked Chicken Wings are the perfect thing for Sunday’s kick-off … or any other day you need to satisfy your finger food craving or newest obsession with wings.
You know, like me.
