I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

Recipe: Zucchini Pizza Crust

Craving pizza but trying to stay away from carbs? This super simple recipe for a zucchini crust pizza is just what you need.

My refrigerator is currently bulging with leftovers from Thanksgiving (at my sister’s) and a Friendsgiving party we had here last night.

And I am eschewing all that, for the moment, and purging my holiday sins with this zucchini pizza crust.

Staying away from carbs doesn’t mean you have to give up all of your favorite foods.

It just means you have to get creative and come up with new ways to indulge.

Without quite indulging.

If you know what I mean.

And pizza, well, the feelings are strong.

Zucchini Pizza Crust with Turkey Bacon-001

I could have Buffalo Chicken Pizza weekly and never tire of it. But, well, I don’t, because I am keeping the carbs at a minimum.

So that’s where something like this recipe for zucchini pizza crust is ideal.

It comes together in nothing flat, taking no more than just a few minutes to grate the zucchini, squeeze the moisture out of it, mix it with a few other ingredients, form into patties, and bake in the oven.

And yer done.

A little sauce on top and a few of your favorite toppings. Pop it into the oven to let the cheese melt and the toppings warm up.

And winner winner, pizza dinner.

I used leftover turkey sausage and turkey bacon that we had, and it was perfect. While you obviously can’t fold your zucchini pizza in half like a more traditional pizza (as if), it does crisp up nicely to give you the crunchy little edges and it’s almost the next best thing.

Carb free.

Guilt free.

Mix and match your flavors with the toppings.

Clean out your refrigerator and use leftovers.

GO WILD.

Rice was easy to give up. Pasta a little harder. And pizza? Perhaps harder still.

And when I was strolling through the produce department recently, and spied these giant portobello mushroom caps, inspiration struck.

When it comes to Buffalo Chicken pizza, Nick and I are all in. Whenever we’re trying out a new pizza place, we usually get a slice of it so we can see how it stands up to others we’ve tried, but with my latest assignment for the folks at Pillsbury, I thought it was high time we try and make it ourselves.

And oh.em.gee.

Nick inhaled his and asked for a second slice as he was heading out the door for the weekend. The Ex gave his approval. And man, oh man, this might be my newest favorite homemade pizza.

Like seriously, it’s that good.

I will do my best to save the rest for Nick when he and his sister come home on Sunday.

But I make no promises.

In the meantime, if you’re a buffalo chicken fan, or like things with a little bit of a kick.

Make this.

Sliced in thin strips, pizzette-style, it’s the perfect little game-day appetizer. And given it’s so quick to make, it’s a great weeknight meal, and I promise it beats anything you can get from your local pizza joint.

Inspiration for new recipe ideas comes out of nowhere sometimes. I have been a little obsessed with the cheesy base I used when I created this recipe, so I started there. But then I wanted to put a little healthy spin on it, and ended up putting salad on top of it. I mean, really, why does salad have to be separate? I love mixed greens topped with nothing else but fresh lemon juice, salt, and pepper, and that’s what I used for this pizza topping.

Something slightly unexpected, but simply delicious.

And on a Friday night, what more do you need? I got the kids involved, rolling out the Pillsbury pizza crust, and we made two pies, this one and a more traditional one with tomato sauce and cheese.

Snack trays in the living room, a new-to-us movie on the tv (the kids chose the 2006 version of Shaggy Dog; decent movie but super slow start), and homemade pizza as a family.

Smooshed Avocado and Egg Whole Wheat Breakfast Pizza

When it comes to smooshed avocado, I am a firm believer that it can replace any sandwich condiment you might have otherwise used instead. Skip the mayo. The mustard. The ketchup. And their assorted calories and sugars, and go avocado. It’s the perfect binder and it’s smooshed consistency is a delicious clean eating way to dress your sandwich.

Now that being said, I think it’s also an awesome base for a little homemade breakfast pizza.

And in just the amount of the time it takes you to make your egg, this satisfying, healthy, protein-packed breakfast can be yours.

Which means, in under ten minutes.

Which is about exactly what I have to make breakfast for myself in the morning.

Mostly because I’d rather sleep an extra few minutes than play in the kitchen on a day that I’m trying to get to work.

So if you like avocados.

And runny eggs.
