Some days it can be hard to find the sunshine, especially a day like today. I can’t make sense as to why things like today continue to happen while people spend copious amounts of energy worrying about banning books and drag shows. Make it make sense. Just make it fucking make sense. It doesn’t. You can’t. Until it does, use your voice. Show up to meetings. Sign the petitions. Text ACT to 644-33 to get involved (I did). But there’s a new asshat in town… 🙄 Clifford is now a freaking rockstar. His tumor and age have slowed him down a LOT and he virtually never misbehaves, and we are seriously so proud of him. Lola, on the other hand, is still full blown PUPPY. Tonight I’m assembling a gate to replace the wooden one she ate through. 😂 Berners love wood and she is OBSESSED with being in the kitchen. So one new metal gate coming right up as soon as I can figure out how to put it together.
Last week when I met the owners of the new French Last week when I met the owners of the new French bakery in town, I told them how happy I was that they were opening … because now I had an endless source for gifts for my mom’s future birthdays and Christmases. She was born in Paris and we’ve grown up with a healthy appreciation for French things … starting with their pastries and baguettes, but so much more. My daughter took her first trip to Paris last year and thoroughly enjoyed the croissants there and she deemed the ones at @chocolatinenj just as perfect. No surprise there since the owner is a French pastry chef! If you’re local and haven’t been, do make a point to stop in and visit. They’re open Wednesday through Sunday and have a wide selection of sweet and savory items and a few French retail selections as well. We’ve tried the macarons, the Croque Monsieur, the croissants, the tomato tarts, the baguette … basically we’re working our way through their display case in due time. Don’t miss this one - enjoy!

I wouldn’t have these awesome little snippets of them growing up. I only wish I had more. Appreciate and document the little mundane things, for they are the very fabric of your life.

Recipe: One Pan Quinoa Bake

Are you on the fence about quinoa? This recipe for a One Pan Quinoa Bake just might change your mind. It worked for my kids.

I probably discovered, and fell in love with, quinoa (pronounced KEEN-wah) some seven or eight years ago. I kind of use it the same way I use cous cous … as an add-in to a stir fry, casserole, salad, or something else along those lines that needs an ingredient to bulk it up a bit. Quinoa doesn’t have a ton of flavor on its own, but it soaks up the flavors of whatever it’s added to really nicely.

My kids, on the other hand, are not exactly fans, so I usually don’t mention it’s in a dish. It’s not like I’m trying to hide it or sneak it in … I just don’t call attention to it, and everyone is happy.

Because, to be honest, quinoa is one of those quiet super foods that is really good for you, so I want my family to be eating it more often, so if I have to add it into a delicious casserole bake with cheese … well, so be it. You can check out some of quinoa’s health benefits right here, but in a nut shell, it’s a grain that is high in protein, has been eaten for thousands of years (starting in South America), has been studied by NASA as a “suitable crop to be grown in outer space,” and 2013 was designated as the “International Year of Quinoa.” I mean, how do you ignore that type of pedigree?

A few months back, the folks at Pereg reached out and offered to send me samples of their quinoa line, so of course I said yes. Their product line has several different flavors, and are all super quick to prepare, and low-maintenance, and I used the roasted garlic version for this dish.

I am a huge fan of one pan meals because between a reasonably busy life and my cooking workshops, the less dishes I have to deal with, the better. I found this recipe from Veggie Balance, and it was on the table in under thirty minutes. Hello weeknight savior! I’m not gonna lie, my kids totally picked out the sweet potatoes and left them on the side of their plate but … hey! They ate quinoa! Small victories! And really with Mexican flavors and melted cheese, I knew it was going to be a winner from the start.

Recipe: Asian Quinoa Salad

Light, healthy, and super easy to make, this Asian Quinoa Salad makes a delicious lunch or side dish.

Last week, I ran a kids’ workshop where we focused on Chinese New Year. We did two crafts (more details on those coming soon), and we made this Asian Quinoa Salad.

Any time I can get the kids shredding and chopping vegetables, they are happy campers, and feeding them a healthy, clean salad is most definitely a bonus at the end of the class.

This recipes makes a HUGE bowl, so safe to say it serves six as a salad, or me if I feast on it for the week. You can add grilled chicken or shrimp to it and really make it a more hearty meal, or keep it as is for a light salad, snack, or side item. It takes less than 25 minutes to make, which means it’s an easy weeknight choice, or make it on Sunday and keep the dressing on the side and you’ll have lunch for the week.

I love how colorful it is, and how guilt-free it is. It’s kind of like Spring on a plate, despite the gloomy grey skies we’ve been seeing out of our window lately, and it’s got a great crunch to it.

In all my years of clean eating, I will say that one of the biggest keys to success is 1) not bringing junk into your home, and 2) making sure your kitchen is stocked with healthy items.

Grab and go items? Even better.

If I don’t have Doritos in the house, I’m not going to eat them.

It really is that simple.

Because while I like Doritos, I’m not going to get in my car and go to the store to specifically buy them.

So if you and I make sure our cabinets, pantry, and refrigerator are consistently stocked with healthy items, it’s far easier to stay on track.
