I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

What to Do with a Giant Bag of Apples from Costco?

I tend to be pretty picky with my sweets; I just happen to prefer salty over sweet.  The Husband?  Even more so.  I can probably count on one hand the desserts he will gravitate towards.  When I make one of the “chosen few,” he will demolish them with reckless abandon.  Last weekend, I made one of his favorites, Mini Cheesecakes.  I think he probably polished off a good 8 or 9 on his own over two days.  ‘Course he happens to have, for the most part, the type of metabolism that can handle that.  He’s lucky that way.

One of his “go-to” desserts is apple pie, so when faced with a still-too-full bag of apples from Costco, I thought it was high time to make apple pie.  After all these years that we’ve been together, I think this might actually be the first apple pie I’ve made.  I stumbled upon a recipe on AllRecipes website that looked easy enough to take for a spin.  When considering recipes to try from there, I usually glance at the first handful of reviews and decide from there.  This recipe for Grandma Ople’s Apple Pie has, as of right now, 562 reviews.  To me, I think that’s a little crazy.  I mean, really, how many people need to say it’s a good, solid recipe before we can be convinced to try it?  Now, granted, many of them have tweaked the recipe here and there, and have offered their suggestions, but 562 reviews?  Crazy.

That being said, if you have a hankering for apple pie, it doesn’t get much easier than this one.  I sprinkled a little bit of cinnamon on the apples before topping with the crust, but otherwise didn’t tinker with the recipe.  When pouring the topping over the crust, I put the dish on a baking pan (and baked it like that as well) to catch any potential spillage.

The end result?  Homemade apple pie with no fuss or muss … and I didn’t need to read 562 views.

Grandma Ople’s Apple Pie

“This was my grandmother’s apple pie recipe. I have never seen another one quite like it. It will always be my favorite, and I hope it becomes one of your favorites as well!”

PREP TIME: 30 Min
Original recipe yield: 1 – 9 inch pie

INGREDIENTS

  • 1 recipe pastry for a 9 inch double crust pie (I used Pillsbury ready-made crust)
  • 1/2 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup water
  • 8 Granny Smith apples – peeled, cored and sliced (I used 7 apples)

Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes. Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. Bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes.

    I have been making that apple pie for about 4 years since I found the recipe online. It is a big hit in my family. And the recipe finally taught me how to do a latitce pie top. I might be buying some apples this weekend now….

    did you do the lattice on top? i can’t really tell from the picture, but i’d like to now before i make it. i think the boyfriend will be extremely impressed with homemade apple pie!

    I get overwhelmed on that site when there are so many reviews. Like you, I look at the first few and if they are good, I may just jump in and give it a try.

    Karen – it definitely seems like a popular one … and with good reason!

    Jessica – I did. I used one crust for the bottom and then cut the top crust piece in strips and Nicholas put them in place. If you want to skip the lattice, I saw a couple of the reviewers used a full crust and just cut slits. You just want to make sure the topping can get inside.

    Interestingly, apple pie is one of my very favorite desserts, though I’ve never actually made it either! Thanks for your review of this one. I agree, allrecipes sometimes has too many reviews and alterations and I get myself confused!

    this seems really simple. i just saw the apple pie episode of ‘good eats’ and alton’s method was super-complex and had a jillion ingredients. i much prefer this one!

    My mum used to make apple pie but I am not much of a dessert person – I usually prefer savoury (except when it comes to chocolate) but I have always been tempted by apple pie with a cheese pastry and hope to do that one day – maybe that would get your savoury in with your apple pie :-)

    Yay! I love that recipe and I have been baking it for a little while now! I know what you mean for overkill on the reviews. Who the heck has the time to read more then a couple at the top? Your pie looks beautiful! The last time I baked this, I guess I was feeling a little extra industrious and added cutout fruit shapes to the top of the crust and colored the shapes with paste food coloring. It actually turned out pretty cute. Your photo is perfect too! =)
