When I saw this recipe a few weeks ago, I bookmarked it to make for St. Patrick’s Day. You know, on my St. Patrick’s Day inspiration board on Pinterest.
I’m not going to lie. It’s got a few steps. But don’t let that scare you. It’s stupid simple to make, and I made it while making all the other things for our St. Patrick’s Day dinner. I think at the height of the afternoon, I had four other recipes going on at the same time. Which is to say you can totally do this while multi-tasking.
As we all do.
I will be the first to admit it. I’m typically not a fan of the “other” Oreos. It just seems a little sacrilegious to me. Messing with a classic. But I’m also talking out of both sides of my mouth, because if I’m going to actually EAT an Oreo, I would go for the chocolate cream-filled ones. Which is exactly why I don’t buy them.
If you like mint.
Or fudgy brownies.
Or a truly decadent dessert.
Or any combination of the three.

That picture of my niece Sadie on Sunday’s Weekend Photos in Review? That was her enjoying her own. And right before she cried after her Dad swiped the last piece of hers.
Nick said these are his favorite brownies to date. Pretty high praise from the in-house fudgy brownie connoisseur.

March 20, 2012 – Bonus Photo
So her brother was sent home from school early today with a fever of 102. Luckily he made it through their field trip today. He’s already upset that he has to miss school tomorrow, but he needs to (hopefully) be better by Thursday because he has two school events that he will be supremely bummed if he has to miss. Fingers crossed that he recovers as quickly as his sister did.
In the meantime, I suggested a quiet activity for Madeline so he could rest, and she went with working on a unicorn mural that someone gave for her birthday.
Ohmygosh, thank you for blogging about my brownie recipe. I am so glad you made them! Yes, they do have lots of steps and after I made them, I got to thinking that there could have been some shortcuts/combining steps but my brain didn’t plan that all out ahead of time with the mint ones. But I do have a version of Bday Oreo ones that are way less involved :)

Wow! That looks so good. Too bad my guy doesn’t think mint should go with chocolate…ruins the chocolate so he says!
