I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Cooking with Country Crock and I Can’t Believe It’s Not Butter {Wrap-Up}

June 26, 2013 · Ad-Free

This is a sponsored post written by me on behalf of Unilever.

First things first, the giveaway winner. Tabathia, comment #16, was the winner of the Wal-Mart gift card – congrats! And thanks to all of you that entered – way to turn out!

Although Country Crock is a staple in my refrigerator, this challenge was the first time that I actually cooked with it. And it won’t be the last. With 70% less saturated fat than butter and 30% fewer calories, it’s hard to ignore those stats, and, quite frankly, it’s an easy swap-out to make. I’m all for changes that are simple and don’t require a lot of thought. And, of course, my little toast monsters in the house use Country Crock as their go-to when spreading something on their warm toast. Because there’s nothing worse than your bread being torn to pieces by attempting to spread cold butter on it.

And what better way than to show you?

Recipe: Cheddar Broccoli and Chicken Casserole (Country Crock) & a Giveaway!

June 16, 2013 · Ad-Free

Country CrockRemember a few weeks ago when I mentioned cooking with Country Crock? I finally did it. Broke down and used Country Crock for something besides spreading onto my warm toast (which it is still totally awesome for, btw).

I ended up going with a recipe straight from Country Crock themselves, namely their Cheddar Broccoli and Chicken Casserole. Broccoli is one of a handful of green vegetables that my kids clamor for. Nick will eat it raw with dip, and they both can’t get enough of it when it’s roasted. So when I saw this easy recipe combining broccoli with chicken and cheese (more kid-approved ingredients), I was in.

Especially since I happened to have all the ingredients on hand already.

And that it’s basically a two-pot dinner, thereby not destroying your kitchen terribly. And a casserole with cheese? Puh-leeze. It’s got my name written all over it. Comfort food, thy name is casserole.

So the verdict? Really good. Simple to make. And another great way to use Country Crock (which has a whopping 70% less saturated fat than butter!), thereby breaking me out of my just-spread-on-toast rut.

Thank you and amen.

Cooking with Country Crock and I Can’t Believe It’s Not Butter

May 31, 2013 · Ad-Free

countrycrockThis is a sponsored post written by me on behalf of Unilever.

Remember when we recently cooked with Foods from Chile?

Ready for another round? But this time, our ingredients are not from Chile.

Way closer! Like, at your local Wal-Mart!

We’re cooking with Country Crock and I Can’t Believe It’s Not Butter.

When it comes to these ingredients, I’m admittedly in a rut.

I use Country Crock for spreading on toast and English muffins and the like. It has 70% less saturated fat than butter and 30% fewer calories than butter, and, quite frankly, I like it most because it’s spreadable. Nothing worse than tearing my piece of toast to pieces with cold, unspreadable butter.

And I Can’t Believe It’s Not Butter? I use it to spritz onto steamed vegetables. Unlike its counterparts, it has no cholesterol or hydrogenated oils, so there’s 0g trans fat per serving. It’s also made with a blend of oils rich in Omega-3 ALA. And it takes my steamed broccoli up a notch in terms of flavors. And less guilt.

But that’s where my creativity ends with these two products.

Which means I need your help.
