Maddie grabbed me a super cute one from her trip to Paris last year, and the Magic Unicorn Salt I get locally is another favorite. What’s yours?

I haven’t had a bagel in ages, but when I saw th I haven’t had a bagel in ages, but when I saw that @njdotcom had picked six bagel shops at the “best in the state,” and one was reasonably local, all the sudden I needed one. I was never one to fall prey to peer pressure, but I’m very definitely a marketer’s dream. 😂 Alfa Bagels is on Route 10 in Randolph and has a good assortment of bagels, including all the usual suspects, but with a few others like rainbow, Asiago and French Toast throw in for good measure. Their bagels always seem to have a nice chew, which I appreciate and I love their sesame one. My go-to order lately is a double toasted flagel with lox spread and tomato. Their lox spread is a little ho hum, but the bagel is delish. Check them out next time you’ve got a craving (or get motivated by a local news story 😝). What’s your bagel order?

Tbh, I wasn’t especially hungry, and the appetizers are always the best section of any menu, so the queso blanco from El Mejicano in town wasn’t too hard a choice. It’s smoky and cheesy and I could have licked the bowl clean, but a girl’s gotta have some boundaries. Happy weekend, friends! ✨

Recipe: Cheddar Broccoli and Chicken Casserole (Country Crock) & a Giveaway!

Country CrockRemember a few weeks ago when I mentioned cooking with Country Crock? I finally did it. Broke down and used Country Crock for something besides spreading onto my warm toast (which it is still totally awesome for, btw).

I ended up going with a recipe straight from Country Crock themselves, namely their Cheddar Broccoli and Chicken Casserole. Broccoli is one of a handful of green vegetables that my kids clamor for. Nick will eat it raw with dip, and they both can’t get enough of it when it’s roasted. So when I saw this easy recipe combining broccoli with chicken and cheese (more kid-approved ingredients), I was in.

Especially since I happened to have all the ingredients on hand already.

And that it’s basically a two-pot dinner, thereby not destroying your kitchen terribly. And a casserole with cheese? Puh-leeze. It’s got my name written all over it. Comfort food, thy name is casserole.

So the verdict? Really good. Simple to make. And another great way to use Country Crock (which has a whopping 70% less saturated fat than butter!), thereby breaking me out of my just-spread-on-toast rut.

Cheddar Broccoli & Chicken Casserole
Recipe courtesy of Country Crock

Ingredients:

  • 1 1/2 cups 2% milk
  • 1/4 cup all-purpose flour
  • 3 Tbsp. Country Crock® Spread, divided
  • 2 cups cut-up cooked chicken breast
  • 4 cups vegetablessuch as broccoli florets and red bell peppers
  • 2 1/4 cups finely shredded low fat cheddar cheese, divided
  • 1 Tbsp. onion powder
  • 1/4 cup panko bread crumbs

Directions:

  • Preheat oven to 425°. Melt 2 tablespoons Country Crock® Spread in large nonstick skillet and saute broccoli and red bell pepper until crisp tender. Whisk milk and flour in large bowl. Add chicken, cooked vegetables, 2 cups cheese, and onion powder; toss to mix. Pour into 8-in. baking dish.
  • Combine panko crumbs, remaining 1 tablespoon Spread and remaining 1/4 cup cheese in small cup. Sprinkle over top of casserole.
  • Bake 30 to 35 minutes or until crumbs are golden and mixture is bubbly around edges.

    Summer recipe using our home-grown cucumbers!
    Cucumber Salad
    2 cucumbers, peeled and thinly sliced
    1/2 cup vinegar
    1/2 cup cold water
    2 1/2 Tablespoons white sugar
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    2 teaspoons dried dill weed
    In a medium bowl combine all ingredients except cucumbers. Whisk until combined. Add cucumbers, and stir. Chill.

    My favorite summer time recipe is a cold chicken salad….
    I use the little o’s noodles….cook them up and add a a large can of chunk chicken, mayo, grapes(for color I normally use red and green) and a can of mandarin oranges drained. Add the oranges and grapes last and mix them in slowly so they dont break apart. Refrigerate….

A friend was taking a trip to Ireland and asked if A friend was taking a trip to Ireland and asked if I wanted her to bring me back anything. Would you believe me if I told you I asked for salt? I love picking up different varieties, whether we’re traveling or I’m just visiting a new shop. Maddie grabbed me a super cute one from her trip to Paris last year, and the Magic Unicorn Salt I get locally is another favorite. What’s yours?
One of us hops like a bunny down the steps, has a One of us hops like a bunny down the steps, has a serious case of FOMO on the daily, gets hiccups more than anyone we know and has perpetual bed head. She’s quite the unique roommate but may be exactly what our home needed. 💛
I haven’t had a bagel in ages, but when I saw th I haven’t had a bagel in ages, but when I saw that @njdotcom had picked six bagel shops at the “best in the state,” and one was reasonably local, all the sudden I needed one. I was never one to fall prey to peer pressure, but I’m very definitely a marketer’s dream. 😂 Alfa Bagels is on Route 10 in Randolph and has a good assortment of bagels, including all the usual suspects, but with a few others like rainbow, Asiago and French Toast throw in for good measure. Their bagels always seem to have a nice chew, which I appreciate and I love their sesame one. My go-to order lately is a double toasted flagel with lox spread and tomato. Their lox spread is a little ho hum, but the bagel is delish. Check them out next time you’ve got a craving (or get motivated by a local news story 😝). What’s your bagel order?

When a stressful week with deadlines ends with Nat When a stressful week with deadlines ends with National Cheese Lovers Day, how could I not partake? Tbh, I wasn’t especially hungry, and the appetizers are always the best section of any menu, so the queso blanco from El Mejicano in town wasn’t too hard a choice. It’s smoky and cheesy and I could have licked the bowl clean, but a girl’s gotta have some boundaries. Happy weekend, friends! ✨
A friend saw this placard and said it reminded her A friend saw this placard and said it reminded her of me and dropped it off in our mailbox, which really touched me. 💛 Life is too freaking short not to make conscious decisions to do more of what makes you happy, and to cut out the things that don’t. Rainbow Rowell said it best, “So, what if, instead of thinking about solving you whole life, you just think about adding additional good things. One at a time. Just let your pile of good things grow.”
