I haven’t had a bagel in ages, but when I saw th I haven’t had a bagel in ages, but when I saw that @njdotcom had picked six bagel shops at the “best in the state,” and one was reasonably local, all the sudden I needed one. I was never one to fall prey to peer pressure, but I’m very definitely a marketer’s dream. 😂 Alfa Bagels is on Route 10 in Randolph and has a good assortment of bagels, including all the usual suspects, but with a few others like rainbow, Asiago and French Toast throw in for good measure. Their bagels always seem to have a nice chew, which I appreciate and I love their sesame one. My go-to order lately is a double toasted flagel with lox spread and tomato. Their lox spread is a little ho hum, but the bagel is delish. Check them out next time you’ve got a craving (or get motivated by a local news story 😝). What’s your bagel order?

When a stressful week with deadlines ends with Nat When a stressful week with deadlines ends with National Cheese Lovers Day, how could I not partake? Tbh, I wasn’t especially hungry, and the appetizers are always the best section of any menu, so the queso blanco from El Mejicano in town wasn’t too hard a choice. It’s smoky and cheesy and I could have licked the bowl clean, but a girl’s gotta have some boundaries. Happy weekend, friends! ✨
A friend saw this placard and said it reminded her A friend saw this placard and said it reminded her of me and dropped it off in our mailbox, which really touched me. 💛 Life is too freaking short not to make conscious decisions to do more of what makes you happy, and to cut out the things that don’t. Rainbow Rowell said it best, “So, what if, instead of thinking about solving you whole life, you just think about adding additional good things. One at a time. Just let your pile of good things grow.”

I mean, I might have a slight obsession but also m I mean, I might have a slight obsession but also my lips are never chapped, so there’s that. 😂 And this is only one of my refill stashes. When I was in middle school, I had literally THE WORST chapped lips ever. Like a complete red ring around my top and bottom lips. I don’t think that’s where my lip balm obsession started, but it certainly didn’t help. Jersey winters are no joke (or our hot summers), so don’t mind me while I just add to my collection. What’s your fave?

Recipe: Flourless Peanut Butter Bacon Cookies

Peanut butter and bacon come together to make one sinfully delicious cookie.

When we were planning which recipes we were going to make for our holiday cookies trays, the kids and I decided on a good mix of old favorites and new discoveries.

And bacon.

Because, after all, if we’re going to be making Peanut Butter Bacon treats for the dogs, we might as well make something bacon-themed for us as well. Via these Flourless Peanut Butter Bacon Cookies.

By crisping up all the bacon for both recipes at the same time, it was easy to make quick work and get both recipes banged out in nothing flat.

And you know, bacon.

We love these cookies.

Much like the traditional criss-cross peanut butter cookie we all know and love, these Flourless Peanut Butter Bacon Cookies are slightly different with the addition of crispy bacon bits and the omission of flour. Perfect for all your gluten-free friends! By omitting the flour, it does make a very fragile cookie, so these are best when *not* served on a cookie platter or sent in the mail.

So, you know, pretty much stellar for enjoying in the confines of your own kitchen. Or with your very bestest friends. Or the cutest kitchen helpers you know.

‘Cause we always have time for that.

Don’t let the cookies’ fragility keep you from making them. You just need to be gentle when stacking or plating because they break easily.

They’re definitely all-stars and worth making.

Again and again and again.

Because, you know, BACON.

It is a delicate sugary, crispy, salty party in your mouth with each and every bite. Just double the bacon.

Flourless Peanut Butter Bacon Cookies
Recipe courtesy of Joy the Baker, who adapted it from The Gourmet Cookbook

makes 15 cookies about the size of your palm

1 cup all-natural chunky or smooth peanut butter
1 cup sugar (1/2 cup brown sugar and 1/2 cup granulated sugar)
1 egg
1 teaspoon baking soda
about 6 slices of bacon, cooked, cooled and diced (double the amount next time)

In a skillet over medium high heat, fry up bacon until cooked through and let cool on paper towels until cool enough to dice (I baked on a wire rack in the oven to cut down on the grease).  Dice up and set aside.

Preheat oven to 350 degrees F.

Grease a baking sheet with butter and set aside. In a mixer combine peanut butter and sugars until well combined, about 2 minutes. Add egg and baking soda and mix for another 2 minutes.  Fold in cooked bacon.   Roll into large walnut sized balls and create a criss-cross pattern with a fork. If you’d like, roll the dough balls in granulated sugar before making the criss-cross pattern. Bake for 10 minutes, until lightly browned. Cool on a baking sheet for five minutes, then transfer to… your mouth.

    Holy cow! Those cookies look too hard to resist! I haven’t make any sweets with bacon in them yet… but, I’m thinking I need to add that to my to-do list for this weekend!

    Definitely would not be able to be left alone with these . . . and the flourless aspect intrigues me even more! They look so fantastic. And yep, who can go wrong with bacon?!
