I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

So my kids introduced me to Tiktok a little over a year ago, and I’m not gonna lie, I’m a little hooked. First, I love that it’s something we can enjoy as a family – I try to find good “Tiktok locations” to shoot their short videos in, and every once in awhile, they let me be in it. While the app may have been intended for a much younger crowd, the demographics are really all over the place. Between kids lip syncing and doing short choreographed dances, to the #humanizethebadge movement featuring cops doing the dances, to even recipes and hair tutorials, there is literally something for everyone. My favorites are the videos that make me laugh until I cry.

And yes, I said recipes. We’ve made a riff off the Stackers from Taco Bell, a new breaded chicken recipe, an egg wrap sandwich situation, and this Nutella Stuffed and Rolled French Toast.

Both of my kids love Nutella (we’ve going through a jar a week here!) and French Toast, so I figured this mash-up would be right up their alley, and I was right. It’s so quick and simple to prepare, you can be enjoying it in no time flat too. I didn’t measure, and most Tiktok recipes don’t include measurements, but have included the basic guidelines below – it’s super simple. Be sure to drop a comment below if you try it out! Recipe: Peanut Butter and Nutella Cookies

Quick to make, delicious little cookies filled with peanut butter and Nutella. #winning

If you don’t follow the directions and mix everything in one bowl.

If you have something against chilling cookie dough and are far too impatient for such things.

If you missed the part of “swirl the Nutella in.”

Make these cookies anyway.

Because I totally did all of the above and they still came out delicious nonetheless.

I never was a rule follower anyway.

Peanut Butter and Nutella Cookies -ready for the oven-001

The batter mixes up in nothing flat. Especially if you happen to ignore the directions and just mix it all together. Using a mini scooper, I plopped the batter onto three cookie sheets and put them in the oven while I was making dinner tonight. It did take slightly longer than the 7-10 minutes of baking the recipe indicated, but that might have something to do with the fact that the dough wasn’t chilled per the directions. Just keep an eye on the cookies while they’re baking and take them out when the edges start to turn golden brown and they feel slightly firm to the touch.

We sent a container over to our neighbors who dropped off the largest zucchini I have ever seen in my life. Fair trade, right? And the kids walked another container up the street.

Which means we have the perfect amount left over to enjoy without overindulging.

The cookies have a tender bite, and while they definitely taste like peanut butter, the Nutella gives them that little something something … keeping them from tasting like the traditional criss-cross peanut butter cookies we all know and love, and making them something special all on their own merit.

Recipe: Nutella Smoothie

A delicious and simple smoothie recipe with only three ingredients … Perfection.

I was standing in front of the yogurt section at our Costco. When I spied the big containers of Greek yogurt, I remembered a smoothie recipe that I just saw over the weekend.

“Nick, I saw a recipe for smoothies that had Greek yogurt, bananas, and Nutella. Want to try it?”

Ew gross.

Which mostly didn’t surprise me. Because while he looooves smoothies and makes them daily, he doesn’t like Nutella.

I know. It’s just as surprising to me too.

But I bought the yogurt anyway because a) it’s heaps cheaper at Costco and b) I would still it eat myself if he didn’t like it in the smoothie (perfect with a sprinkling of crunchy granola and a drizzle of honey).

So yesterday, we were having a perfectly chill Memorial Day. The kind of day that straddles that balance between doing fun things in the neighborhood and doing nothing.

If “doing nothing” equates to the seven loads of laundry I did.

And while the kids were eating lunch, I quickly whipped up a batch of the smoothies, portioning it out into three glasses.

Minutes later I heard the unmistakable slurp of empty glasses.

“Hmm, I guess it wasn’t gross after all, huh Nick?”

No, it was good. Can you make more?

And Mom wins again.

Super simple to make and with only three ingredients, they are delicious without a ton of guilt. Just the right amount of chocolate flavor with a hint of the banana and Greek yogurt. For the second batch, I used half of the Nutella called for. While I love Nutella, it’s not exactly low calorie. Just two tablespoons still delivered all the chocolatey flavor we needed.

Happy 50th Birthday Nutella! {Share Your Story}

NutellaWhen I was a little older than Madeline, we lived in Italy for a bit and I discovered Nutella. The smooth, creamy, chocolaty spread was subtly flavored with hazelnuts and routinely slathered on lightly toasted bread.

And the love affair began.

Years later, long after we moved back to the US, Nutella finally became available here, and the devotion to it continued. Through adulthood, it has found its way through various incarnations in my kitchen … snuck into thin wispy crepes, used in muffins and cakes, and even brownies. But the very best way I still enjoy it is pure old school, on those simple unassuming pieces of toast, instantly bringing me back to childhood.

And, of course, in an even more naked way… from a spoon dipped into the jar.

Who are we kidding?

A few years ago, Madeline discovered the jar in our kitchen cabinet and asked for a taste.

And that was pretty much the end of that.

My eat-all-things-chocolate child had begun her very own love affair with Nutella.

Can you blame her?

In fact, last year, the kids’ babysitters introduced her to “chocolate toast,” which was sometimes also known as breakfast.

Recipe: No Bake Oatmeal S’mores Cookies {The S’mores Cookbook}

Both of the kids have a sweet tooth. Madeline’s is ridiculous, and she is forever looking for her next sweet fix. Nick’s isn’t quite as rampant, but he never turns down dessert after dinner, much like my Dad, just needing something small and sweet to finish off the night.

Both of the kids totally see dinner as a means to get dessert, and when they’re not feeling whatever I’m serving up, they always make sure to eat just enough to secure a sweet finish.

Nick is also a little bit of a s’mores addict. If there isn’t any dessert in the house, he can often be found making s’mores in the microwave for him and his sister, so when the new S’mores cookbook arrived last week, I knew it wouldn’t be long before we were baking from it.

I flipped through the pages, looking for something super easy and a recipe that I had all the ingredients for, and once I spied the No Bake S’mores Cookies, I didn’t need to look any further.

Regular readers know how much we love no bake cookies, and combining that with Nick’s obsession with s’mores? It’s pretty much a no brainer.

Taking less than thirty minutes from start to finish to make, the kids could barely wait for them to set before digging in. Besides the obvious toasted marshmallow on top, this is the first no bake recipe that I’ve seen that includes chocolate chips on the ingredient list (usually it’s just the cocoa powder). Either way, I bet you have all the ingredients in your pantry to make these on a whim … or when your cookie monsters are looking for their next fix.

I got 28 cookies out of the batch, and we kept some here, and quickly distributed a lot of them to friends and neighbors. And, of course, the next day, the kids were looking for more.

As far as the cookbook? I think it makes a nice addition to your collection. There is a picture of every recipe (love that!), and each recipe is super simple to make, using basic ingredients that are either already in your kitchen, or easy to find. There is a whole chapter dedicated to riffs on traditional s’mores, another one on breakfast s’mores that includes S’mores Danish and S’mores Stuffed French Toast, and countless other drool-worthy recipes like S’mores Layer Cake, Crustless S’mores Cheesecake, and S’mores Turnovers.

Recipe: S’mores Nutella Pizza {and At-Home Movie Night}

When we were making our Summer Bucket List as a family, I kept a keen eye on having a good balance of free and not-so-free activities. Things we could do easily at home, but perhaps don’t do enough. And things that might require a bit of pre-planning and a few extra dollars.

Nick doesn’t really remember his first trip to DisneyWorld when he was four. When we went back this past May, it was as if he hadn’t seen any of it before.

One of his friends went on a ten day Alaskan cruise last year, and when he came back and I asked him what his favorite part was, it was scrambled eggs they had on a port-side stop … at a Hilton Garden Inn. A hotel chain that he actually lives reasonably close to.

The point of those two things?

Kids don’t care what you spend and what you do.

They just want your time and undivided attention.

Which I can absolutely do. In fact, I do believe I excel in it.

So things like make homemade bubbles, sleep in, and movie night … these are things that I know my kids enjoy just as much as things like go ziplining.

And when the at-home movie night means in Mom’s bed? All together? Well, all bets are off.

Because who am I to complain about a little Nutella on my white sheets?

And yes, that totally did happen.

And I totally didn’t yell. Not one decibel.

Recipe: Giada De Laurentiis’ Nutella Fudge

One of my co-workers mentioned that she stopped reading my web site months ago when I “started cooking healthy.”  Jill, this one’s for you.

Fudgy.  Sinfully sweet.  Nutella.  Giada De Laurentiis.  How can you go wrong?

This recipe is super simple to make and will take care of your sweet craving very nicely.  Especially if you happen to have a jar of Nutella taking up real estate in your pantry.  I was first introduced to Nutella when I was a kid and we lived in England for a few years.  To this day, my favorite way to eat it is from the jar with a swipe of my finger a spoon.  Which is precisely why I hide the jar in the back of the baking cabinet.  So I don’t get tempted by it.  If you’re not a purist, after making this fudge, these self-frosting cupcakes are another good way to indulge in your Nutella fantasies.
